Abstract [sv]

Denna avhandling undersöker hur svenska konsumenter anpassar sitt beteende mot hållbara livsmedel under en lågkonjunktur. Med stigande livsmedelspriser och ekonomisk osäkerhet, står hållbara livsmedel inför både utmaningar och möjligheter. Studien använder teorin om planerat beteende för att analysera attityder, upplevd beteendekontroll och sociala normer påverkar konsumenternas beslut av hållbara matalternativ i lågkonjunktur. Genom kvalitativa intervjuer med olika deltagare visar forskningen att även om miljömedvetenheten ökar, leder ekonomisk press ofta till att konsumenter prioriterar pris över hållbarhet. Därför är det mer sannolikt att konsumenter väljer billigare och mindre hållbara alternativ under lågkonjunktur. Senna studie bidrar till förståelsen av hållbars konsumentbeteende under svåra ekonomiska förhållanden och ger implikationer för beslutfattare och företag som strävar efter att främja hållbar konsumtion under lågkonjunktur. Viktiga insikter inkluderar vikten av pris och tillgänglighet i konsumenternas beslutfattande, vilket tyder på att mer tillgängliga och prisvärda hållbara livsmedelsalternativ skulle kunna upprätthålla konsumentens engagemang för hållbarhet under ekonomiska utmaningar. 

Abstract [en]

This thesis examines the behaviors of Swedish consumers towards sustainable food consumption during economic recessions. With rising food prices and general economic uncertainty, sustainable food choices face both challenges and opportunities. Using the Theory of Planned Behavior as a framework, this study explores how attitudes, perceived behavioral control and social norms influence consumer decisions towards sustainable food options in economic recessions. Through qualitative interviews with diverse participants, the research indicates that while environmental awareness is on the rise, economic pressure often leads consumers to prioritize price over sustainability. Therefore, consumers are more likely to choose cheaper and less sustainable options during recessions. This study contributes to the understanding of sustainable consumer behavior in adverse economic conditions and provides implications for policymakers and businesses aiming to promote sustainable consumption during recession. Key insights include the importance of price and availability in consumer decision-making, suggesting that more accessible and affordably priced sustainable food options could maintain consumer engagement with sustainability during economic challenges.
